Dining with a view at the Blue
The soothing sounds of the waterfall, impeccable decor, exquisite lighting and delightfully sumptuous meals - fine dining, and a breathtaking view to match ... The Jamaica Pegasus hotel has exceeded many culinary expectations with the newly opened The Blue Window.
Director of sales, Prudence Simpson, told Food that in the four months that the restaurant has been opened, the response has been very good.
"The constructive and creative element of the dining room came from the collaborative efforts of resident interior designer, Jackie Hendrickson, and General Manager Peter Hilary.
"Currently, we offer a breakfast buffet served daily from 7-10 a.m, an extensive buffet lunch Monday to Friday from 12 to 3 p.m., and dinner, which flows on to the beautiful pool deck, for those desiring that fresh, light and crisp night air."
Executive Chef Mark Cole made it clear that the dishes on the menu provide a variety of palatable culinary pleasures, consisting of traditionally prepared authentic Jamaican dishes created with an international flair.
"Combining international and Jamaican ideas is how we conceptualised our menu. A
lot of people dining at the Blue Window are not aware that they can get Jamaican flair at an international restaurant," he declared.
In the kitchen, Cole joins forces with award-winning Sous Chef Richard Pinnock. Along with the rest of their team, they collaborate on creating mouth-watering soups, salads, appetisers, sandwiches and burgers, delectable main courses, Jamaican specials, pastas and desserts.
If you are not a meat lover, have no fear, they specialise in vegetarian dishes. Their gastronomical offerings include the French onion soup, which incorporates onion soup topped with a layer of melted Gruyere cheese bubbling over with love. Their roasted beet and provolone salad boasts freshly roasted beet and shaved provolone cheese on a bed of baby greens with a light beetroot dressing. The grilled Atlantis salmon was an artistic sight to behold, served with a lychee chilli sauce and accompanied by coconut couscous and mixed green salad.
Jamaican dishes have a place of pride on their menu. Cole noted, "We have a Jamaica corner that we are indeed very proud of and that many fall in love with at every bite." The oxtail slowly braised with a hint of spicy Scotch bonnet pepper served with rice and peas definitely takes your taste buds on a journey to a flavourful tropical paradise. For those with a sweet tooth, the traditionally Jamaican trio dessert sampler of bread pudding, coconut gizzada and potato pudding is there to deliver.
But outside of The Blue Window, the hotel ensures that every night is equally delicious. Tuesday night is their grill night while their famous brunch is on Sundays. But lunch is also a big event with themed lunch days including Mexican, seafood, Italian Day, American or Jamaican Day. Gastronomic offering from around the world.
